CHALLENGE
Help Shake Shack to speed up the creation a plant based version of their iconic custard ice cream (contains dairy and egg) which they have been working for a long time with no success.
APPROACH
Recreating the iconic flavor and texture of the custard with a simple commercial execution were the biggest challenges. Our AI module Biaggio Synthesis was used to optimize ingredient ratios and find out-of-the-box ingredients.
REsult
The high-performing formula delivered the texture and taste performance required for the launch. Often consumers couldn't tell a difference between the animal and plant-based version
