Flavor and fragance development
CHALLENGE
Two challenges: match an existing flavor for a global brand, as well as the creation of a new tropical flavor from scratch.
APPROACH
We characterized our reference products via GCMS, GCQ, and in-vitro mastication to understand which compounds we would allow Synthesis to experiment with in order to formulate a winning flavor.
REsult
The matched single-fruit flavor was labeled as "able to replace" the existing commercial flavor, and the new developed flavors also underwent a test which resulted in positive reviews.
The old fashioned way
Flavor houses charge clients premium fees for flavor matching and often lack transparency in their formulas.
The NotCo way
Two formulations transition (very hard to do) for flavor creation with no previous existing chemical formulas as reference.
