Create a sugar-free chocolate with a HFSS score of 3 that preserves the sweetness and taste consumers expect.
APPROACH
Mapped the sucrose time–intensity curve and used Giuseppe AI Elevate to pinpoint and combine alternative ingredients developing a new chocolate matrix —sourced from across industries—to replicate sweetness without sugar.
